YOU NEED (2 people, 4 slices of bread) :
1/2 eggplant 1 sweet pepper 1/2 squash 1/2 yellow onion 10 mushrooms philadelpia (cream cheese) red and green pesto parmesan balsamic olive oil salt & pepper pine nuts
Put the oven on 200 degrees. Cut the eggplant into slices and place them on baking paper with salt. Wait a while until the eggplant has started to “sweat”, take them out and rinse them with water and put them back on the baking paper. Cut squash, mushrooms, onions and peppers. Spread them out on the baking paper. Pour over olive oil, salt and pepper. Put in the oven and wait until they get a gold color and become soft (30 mins tend to be enough at 200 degrees). Warm up the bread. Top it with Philadelphia, Red and Green Pesto. Put the vegetables on top of the bread. How much vegetables you want on a slice you decide for yourself. Sprinkle with sprouts, pine nuts, parmesan and creamy balsamic.
